What you will need
Almond Flour – This is a great gluten free alternative baking flour to use! It is contains more fiber and protein than most flours.
Coconut Flour – I like to use a combination of almond and coconut flour in my baked good to get a less grainy texture.
Coconut Oil – This is a great healthier cooking oil that contains healthy fats that support brain health as well as a balanced microbiome. You can also substitute with a grass fed butter or vegan butter alternative.
Maple Syrup or Honey – These are my preferred sweeteners of choice that aren’t refined.
Cranberry Sauce – If you are looking for a delicious homemade cranberry sauce, try my Orange Cranberry Sauce Recipe! If you are using one from the can, make sure it is not the jelly kind and that it is thick.
Coconut Sugar – This is what i love to use to sweeten the crumble topping. It has an almost brown sugar like taste which pairs perfectly!
Cinnamon – A touch of cinnamon gives these bars a nice fall spice flavor note.
Coconut Butter – This makes for an excellent healthier icing alternative. It is high in healthy fats and very low in sugar.
Orange Juice – This is what we will use to flavor the icing with.
Baking Soda – This will help make the crust rise while baking.

How to make the cranberry crumble bars
First, make the cranberry sauce by adding all the ingredients into a small sauce pan over medium heat. Bring to a boil and then turn the heat down to simmer for 20 minutes or until it has thickened. Set the cranberry sauce aside.(If you already have cranberry sauce on hand you can skip this part.)
Next, mix together the crust ingredients in a bowl and then press down into an 8×8 baking dish lined with parchment paper. Add the cranberry sauce on top of the shortbread crust layer and spread out evenly. Make the crumble by adding all the ingredients to a bowl and mixing together. Place the bowl in the freezer for a few minutes and then stir around with a fork to get a crumble consistency. Add the crumble on top of the cranberry sauce and then bake at 350 degrees for 25-30 minutes. Take the cranberry crumble out of the over to cool down.
Then, Make the orange glaze by heating everything in a small sauce pan on low heat. Make sure to whisk the glaze mixture frequently until it forms a drippy consistency. Cut the cranberry crumble into 9 bars and drizzle the orange glaze on top. Serve and enjoy!
