Rainbow Matcha Yogurt Bowl

If you are one who struggles to eat breakfast or needs some breakfast inspo to mix things up, then I highly recommend trying out this colorful rainbow matcha yogurt bowl! It’s packed with antioxidants, fiber, and healthy fats! They say variety is the spice of life, and I couldn’t agree more especially when it comes to breakfast.

It can be easy to fall into a breakfast rut which makes it harder for us to be motivated to eat shortly after we wake up. Breakfast is definitely one of the most important meals of the day because the body needs proper nutrients to start functioning optimally after we wake up. this recipe is great to start the day with because it contains lots of fruits to help hydrate the body and provides many micronutrients.

A way to make your breakfast bowls more enjoyable is by adding a variety of colorful foods and different flavor combinations! I love to use all kinds of fruits(cutting them into fun shapes is a bonus!) Try berries, bananas, kiwis, cherries, mangos, pineapple and other varieties!

Another way to elevate your breakfasts is by incorporating different superfood powders, like matcha, cacao powder, beet powder, and flavored protein powders. Don’t forget to use foods like nuts, granola, coconut flakes, cacao nibs, or even some chopped dark chocolate for a fun, crunchy texture!

What you will need

DF Yogurt – I love using a thicker yogurt that is coconut based by Culina. It is one of the best dairy free yogurts I’ve tried and this brand only uses a little maple syrup to sweeten. I use the plain variety in this recipe.

Matcha Powder – Not all matcha is created equal and I look for premium grade matcha that is 3rd party tested for heavy metals and toxins! My favorite brand is Matcha Nude. you can use code “COLORFUL_SUPERFOODIE” for 10% off your order.

Maple Syrup – This is what we will use to sweeten the yogurt with. You can substitute with honey as well.

Vanilla Extract – This adds a delicious flavor to the yogurt. I prefer adding my own pure vanilla extract because many vanilla flavored yogurts use artificial flavorings.

Fruit – The key is using a variety of colorful fruits! In this bowl I used strawberries, kiwi, mango, blueberries, and banana slices.

GF Granola You can use any granola you prefer. I use a gluten free one by the brand Purely Elizabeth because it uses coconut sugar to sweeten and is certified organic.

Hemp Hearts – These cute little seeds are packed with omega fatty acids and many essential minerals like phosphorus, potassium, sodium, magnesium, sulfur, calcium, iron, and zinc.

Cacao Nibs This is an excellent source of magnesium which is an essential mineral that supports nerve function and bone health. Cacao nibs are also rich in antioxidants that protect the body from oxidative stress and free radical damage.

How to make the rainbow matcha yogurt bowl

  1. In a bowl, mix together the yogurt, matcha, maple syrup, and vanilla powder and then set aside.
  2. Cut and slice the strawberries, mango, kiwi, and banana. Add them to the yogurt bowl along with the blueberries and granola.
  3. Sprinkle the hemp hearts and cacao nibs on top and enjoy!

Ingredients
  

  • 1 cup dairy free plain yogurt
  • 1 tsp matcha powder
  • 1 tbsp maple syrup
  • 1/2 tsp vanilla extract
  • 6 Strawberry slices
  • 1/4 cup bluberries
  • 1 kiwi sliced
  • 1/2 mango
  • A few banana slices
  • 1/4 gluten free granola
  • 1 tbsp Hemp hearts
  • 1 tbps cacao nibs

Instructions
 

  • In a bowl, mix together the yogurt, matcha, maple syrup, and vanilla powder and then set aside.
  • Cut and slice the strawberries, mango, kiwi, and banana. Add them to the yogurt bowl along with the blueberries and granola.
  • Sprinkle the hemp hearts and cacao nibs on top and enjoy!
