Berry Yogurt Granola Parfait

I love simple healthy breakfast recipes that don’t take much time at all to make like this Berry Yogurt Granola Parfait! It’s packed with fiber, healthy fats, and antioxidants that will nourish the body and satisfy the taste buds. I have a fantastic recipe for a high fiber gluten free granola that I can literally just snack on by itself it’s that good. This is the perfect breakfast recipe to have on the go during a busy week as well!

What you will need

Berries – I love to use a combination of blueberries, raspberries, and strawberries. However, you can honestly use whatever fruit you’d like in this recipe!

DF Vanilla Yogurt – I personally love using the Greek style coconut based yogurt by Culina because it’s made with very clean ingredients. If you want some extra protein you could mix in some vanilla protein powder as well!

Honey – This is what I like to us to sweeten the yogurt with since I go for a non added sugar yogurt usually. You can also use monk fruit or maple syrup.

GF Oats – To make the granola make sure to get certified gluten free oats that are organic. I love to use the sprouted ones by One Degree.

Hemp Hearts – These tiny little seeds are packed with omega fatty acids, protein, and fiber!

Shredded Coconut – Coconut is also high in fiber which is great to support healthy digestion.

Sliced Almonds – I like adding nuts like almonds to my granola, but you can omit as well.

Coconut Oil – This is a healthier oil to bake with and it goes well with the flavors of the granola.

Maple Syrup – This is my preferred sweetener for the granola, but you can also substitute with honey.

Vanilla Extract – This gives the granola a delicious flavor note.

How to make the berry yogurt granola parfait

First, make the high fiber granola by mixing all the granola ingredients together in a large bowl. Spread out the granola evenly on a baking sheet lined with parchment paper and bake for 15 minutes or until golden brown at 350 degrees. Once the granola is done baking, set aside to cool completely before breaking it up into pieces.

Then, add the honey to the yogurt and whisk everything together well. (You could even mix in some vanilla protein powder or collagen peptides for extra protein.) Prepare and wash the berries, and if you are using strawberries, chop them into smaller pieces and mix with the other berries.

Next,  assemble the parfait by layering the yogurt, berries, and gf high fiber granola in a jar or glass cup. You can eat right away or store in the fridge for a few days to enjoy later.

Ingredients
  

For the parfait

  • 1/2 cup strawberries or raspberries
  • 1/2 cup blueberries
  • 1/2 cup gf high fiber granola(or you can substitute with your favorite granola)
  • 1 cup dairy free unsweetened vanilla yogurt
  • 2 tsp honey

For the gluten free high fiber granola

  • 2 cups gluten free rolled oats
  • 1/3 cup hemp hearts
  • 1/3 cup unsweetened shredded coconut
  • 1/3 cup sliced almonds
  • 1/3 cup melted coconut oil
  • 1/3 cup maple syrup
  • 1 tsp vanilla extract

Instructions
 

  • Mix all the granola ingredients in a large bowl. Spread out the granola on a baking sheet lined with parchment paper and bake for 20 minutes at 350 degrees.
  • Once the granola is done baking, set aside to cool completely.
  • Add the honey to the yogurt and whisk everything together well.
  • Chop the strawberries into smaller pieces and mix with the other berries.
  •  Assemble the parfait by layering the yogurt, berries, and gf high fiber granola.
  • Enjoy immediately or prep for breakfast the next day.
