Strawberry Bounty Bars

I’ve you’ve never had a Bounty Bar before, it is basically an almond joy without the almonds and has such a delicious coconut chocolate flavor that just melts in your mouth! These Strawberry Bounty Bars have a fun fruity flavor twist on the classic version, and they are probably one of my new favorite candy bars! They are very easy to make, and only require 5 simple healthier ingredients.

What you will need

Shredded Coconut – You will want to make sure to use unsweetened coconut shreds.

Freeze Dried Strawberries – I make sure to use organic freeze dried strawberries for best quality since non organic strawberries can be high in pesticide residue.

Maple Syrup – This is my preferred sweetener for this recipe but you could substitute with honey as well!

Coconut Oil – This helps bind together the ingredients and also adds some healthy fats to this recipe!

Chocolate Chips – My favorite brand of chocolate to use is Hu Kitchen. Their chocolate is free from a lot of unnecessary ingredients and it is dairy, gluten, soy, and refined sugar free!

How to make the strawberry bounty bars

First, Add the shredded coconut, freeze dried, coconut oil, and maple syrup to a food processor and then process the ingredients for about 1-2 minutes.

Then take the strawberry coconut mixture and add it into silicone candy bar molds or shape them into bars by hand. Place the strawberry coconut bars in the freezer for 1 hour so they will be solid enough for dipping in chocolate.

Next, melt the chocolate chips in a bowl either in the microwave in 30-second increments or in a double boiler.(If your chocolate is a little thick, add some coconut oil to melt in with the chocolate to thin it out.)

Take the strawberry coconut bars out of the freezer and dip each one in the melted chocolate and then place them on a parchment paper lined sheet pan to set. Drizzle some more chocolate on top and sprinkle some freeze-dried strawberries on top for a pretty look if desired!

You can store these at room temperature for a few days or you can store them in the fridge which will make them last for about 2 weeks.

  • 3 cups unsweetened shredded coconut

  • 1 1/4 DF Chocolate Chips

  • Drizzle some more chocolate on top and sprinkle some freeze-dried strawberries on top.
  • Enjoy within 1 week of making.
