Pecan Pie Truffles

Pecan Pie in truffle form I think yes! These truffles are made with simple real food ingredients and are Gluten Free, Vegan, and Paleo. I love my treats in bite form and they are the perfect thing to satisfy your sweet cravings this holiday season. Trust me you NEED these in your life! These pecan pie truffles make a great holiday dessert to share with friends and family.

What you will need

Pecan Butter – Make sure to use a creamy pecan butter in this recipe to help bind the truffle filling. I use a cinnamon vanilla one but you can use any almond butter. You can even substitute with almond butter!

Dates – Adding dates or date syrup into your treats is a great way to sweeten them without any processed sugar. It has a natural caramel like flavor which is absolutely delicious! They are seriously natures candy and are loaded with fiber, antioxidants, and essential vitamins and minerals.

Pecans – You can’t have pecan pie without these! Pecans contain many essential vitamins and minerals like vitamin E, vitamin A, calcium, magnesium, potassium, folic acid, and more. They also may support healthy cholesterol levels and heart health.

Almond Flour – This flour is great for binding making the truffle filling more dough like. It is also rich in fiber and is a great lower carb gluten free flour.

Vanilla Extract – This adds a nice sweet note that really adds to the pecan pie flavor.

Chocolate Chips – I use dark chocolate this is dairy free and sweetened with stevia. You can use whatever chocolate you’d like though. I prefer a dark chocolate so the truffles aren’t overly sweet.

Coconut Oil – Melting the chocolate with a little bit of coconut oil helps thin out the chocolate and makes it easier for dipping.

Sea Salt – I love adding a touch of sea salt to my treats to balance out the sweetness.

How to make the pecan pie truffles

Make the Filling

First, add the dates, almond butter, pecans, vanilla extract, and almond flour into a food processor. Process until a dough like texture forms(about 30 seconds). Roll the pecan pie mixture into about 20 balls and then place them on a parchment paper lines sheet pan. Put the pecan pie balls in the freezer for 30 mins.

Melt the Chocolate

Next, Melt your chocolate chips with the coconut oil in a double boiler or in the microwave for 30 second increments. Take the pecan pie balls out of the freezer and dip each one in the melted chocolate and coat evenly.

Decorate the Truffles

Place them back on the parchment paper lined baking sheet. Once the chocolate is set, drizzle more chocolate on top and sprinkle some chopped pecan pieces. Store in the fridge and enjoy throughout the week!

Ingredients
  

  • 1 cup creamy almond or pecan butter
  • 2 cups pitted dates(room temp and cut into smaller pieces
  • 1/2 cup chopped pecans
  • 1/2 cup almond flour
  • 2 tsp vanilla extract
  • 1 1/2 cups chocolate chips
  • 1 tsp coconut oil
  • 1/8 tsp sea salt

Instructions
 

  • Add the dates, almond butter, pecans, vanilla extract, and almond flour into a food processor. Process until a dough like texture.
