No Bake Sea Salt Protein Brownies

I’m all about snacks and desserts that are balanced as well as delicious! My new obsession is definitely this No Bake Sea Salt Protein Brownie recipe! They have such a soft and gooey texture, and have the perfect sweet-salty balance! These brownies are more blood sugar friendly because they are full of fiber, protein, and healthy fats! They are also refined sugar free and are only sweetened with a little coconut sugar. Trust me, you’ll definitely be glad you made these to enjoy throughout the busy week!

What you will need

Almond Flour – This is a great gluten free alternative flour that is higher in protein.

Dates – This is what we will use to sweeten the brownies. They give these brownies a caramel like flavor and chewy texture!

Cacao Powder – Raw cacao powder is packed with antioxidants and makes the brownies very rich.

Chocolate Protein Powder – I used a chocolate plant based protein powder by Truvani. You can use your favorite protein powder as well!

Creamy Almond Butter – This is definitely key to making these brownies soft and chewy! Make sure to use a creamy drippy almond butter. You can also substitute with raw cashew butter or tahini!

Chocolate Chips – I used dairy free stevia sweetened chocolate chips, but you can use any chocolate chips you prefer.

Sea Salt Flakes – Adding a touch of sea salt to a decadent treat helps balance the sweetness out! I am a huge fan of sea salt and chocolate especially!

How to make the no bake sea salt protein brownies

First, Add the dates to a bowl and pour over some hot water to cover the dates. Let them soak for at least 30 minutes then drain the water and pat down the access water with a towel.

Add the almond flour, protein powder, cacao powder, almond butter, dates, melted coconut oil, and vanilla extract to a food processor and process until a dough like consistency forms. Add the mixture to a bowl and then mix in the 2/3 cup chocolate chips.

Then, press brownie mixture into an 8×8 baking dish lined with parchment paper or a silicone mold one. Place brownie mixture in the fridge to chill for at least 2 hours.

Take the dish out of the fridge and carefully cut the brownie into 9 regular size brownies or 16 smaller brownies. Melt the remaining 1/3 cup chocolate chips with a little coconut oil. Drizzle the chocolate over the brownies and sprinkle some sea salt. Store in the fridge and enjoy throughout the week!
