Chocolate Raspberry Donuts

One of my absolute favorite combinations is chocolate and raspberries. I had this amazing idea to make some paleo-vegan Chocolate Raspberry Donuts and they truly are what dreams are made of! They have a soft fluffy texture and a creamy coconut butter based icing that is low in sugar and tastes fabulous! Not only do they taste amazing but they look absolutely gorgeous too! I definitely believe you can live a healthy balanced diet while enjoying donuts!

Are these chocolate raspberry donuts healthy?

These donuts are much healthier than your average donut because they are baked not fried, and also because they are dairy, grain, and refined sugar free! The batter consists of nut flours that are higher in protein and fiber compared to other refined flours which can spike blood sugar a lot.

The icing is made with healthy fats from coconut milk and coconut butter and is sweetened with monk fruit instead of sugar. Monk fruit is an excellent sweetener alternative if you want to make something lower in sugar and more blood sugar balanced.

What you will need

For the Donut Batter

  • 1 cup almond flour
  • 2/3 cup tapioca flour(can substitute with cassava flour)
  • 1/4 cup coconut flour
  • 1/2 cup coconut sugar(can substitute with maples syrup or granulated monk fruit)
  • 1 cup nut milk(I like to use almond or coconut milk)
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 3 tbsp cacao powder
  • 1/4 cup apple sauce
  • 2 flax eggs(2 tbsp ground flax mixed with 4 tbsp water)
  • 2/3 cup freeze dried raspberries(you can use fresh but it may make the donuts more soggy so use less)
  • 1 tsp vanilla extract

For the Icing

  • 4 tbsp coconut butter
  • 1/2 cup full fat coconut milk
  • 2 tbsp powdered monk fruit(you can use regular powdered sugar if you prefer)
  • Natural red food coloring(this is optional but gives the icing a pretty color!)
  • 1/4 cup chocolate chips
  • 1 tsp coconut oil

Notes:

You will also need a silicone donut mold which makes these donuts way more easy to get out and less likely to fall apart! I have linked the one I use here.

How to make the chocolate raspberry donuts

First, In a bowl, mix together the almond flour, tapioca flour, coconut flour, coconut sugar, baking soda, and baking powder. In a sperate bowl, mix together the nut milk, flax eggs, apple sauce, and vanilla extract. mix the wet and dry ingredients together then carefully fold in the freeze dried raspberries.

Then, Pour donut batter into a piping bag or gallon ziplock bag with the corner cut off. Squeeze the batter into the greased donut molds and bake them for 23-25 mins. Once done baking let cool for a few minutes then stick the mold in the freezer for an hour. After the donuts are frozen, carefully take them out of the silicone mold.

In a small sauce pan over medium low heat, warm up the full fat coconut milk and coconut butter. Whisk in the powdered sugar and a few drops of red food coloring. Pour icing into a small bowl. Dip each donut in the icing and place on a parchment paper lined baking sheet. Once the icing has set, melt you chocolate chips with the coconut oil. Drizzle chocolate over the donuts and sprinkle some freeze dried raspberries on top. Enjoy!

  • 1 silicone donut mold(for 9 regular sized donuts)

Ingredients
  

  • 1 cup almond flour
  • 2/3 cup tapioca flour
  • 1/4 cup coconut flour

  • 1/2 tsp baking powder

Notes

Store donuts in the fridge for up to a week or in the freezer for 3 months.
