Watermelon Cucumber Feta Salad 

 When I first heard of this type of salad, I was a bit skeptical I’ll be honest. Once I decided to finally try it, I was pleasantly surprised at how good it was! It has a nice combo and sweet, tangy and crunchy, which checks all the boxes for me. I also whipped up a honey lime vinaigrette to go with the salad and it is fabulous! I made this recipe with a dairy free feta but you can use regular feta too if that’s your preference!

What you will need

Watermelon – Make sure to get a seedless watermelon because it would take so much time to de-seed and make the watermelon mushy in the process.

Cucumber – I personally love Persian cucumbers because they are more crisp and flavorful.

Red Onion – This is my favorite onion personally because it is sweeter tasting. Onions are great to add to your diet for immune support, and are rich in B vitamins.

Basil or Mint – I have seen so many versions of this salad with either mint or basil. I personally love basil in this salad but if you like the fresh minty flavor in your salads then go for it!

Dairy Free Feta – I found the best dairy free feta cheese alternative that is made with simple ingredients. Violife is the brand that I use and tastes almost like the real deal.

Limes – You definitely don’t want to skip out on the honey lime vinaigrette! We will use a combination of lime juice and the zest for a powerful citrus flavor!

Honey – I try to use raw local honey when I can to support my immune health and I think it tastes way better!

White Wine Vinegar – This is the type of vinegar I like in the dressing.

Olive Oil – This is part of the base for the salad dressing. Olive oil is very nutrient dense and a great source of healthy fats.

How to make the watermelon cucumber feta salad

First, chop the watermelon into small cubes and then place them on a towel to absorb some of the juice. Then chop and slice the cucumber, red onion, basil or mint. Add everything to a big salad bowl and toss in the crumbled feta.

Next, make the honey lime vinaigrette by whisking together the lime juice and zest, honey, olive oil, and white wine vinegar in a bowl. When ready to serve, drizzle the dressing over the salad and then toss the salad a bit until it’s coated evenly with the dressing.

Eat within 2 days after making other wise it will get a bit soggy from the watermelon.

Ingredients
  

  • 3 cups chopped seedless watermelon
  • 2 cups chopped cucumbers
  • 1/2 medium red onion sliced thinly
  • 1/3 cup chopped basil or mint
  • 1 cup dairy free feta crumbles

For the honey lime vinaigrette:

  • Juice of 2 limes
  • 2 tbsp honey
  • 1/4 cup olive oil
  • 2 tbsp white wine vinegar
  • Zest of 1 lime

Instructions
 

  • Chop the watermelon, cucumbers, basil, or mint, and slice the red onion.
  • Add them to a large salad bowl and top with the feta crumbles.
  • Make the honey lime vinagrette by whisking all the ingredients together in a bowl.
  • Drizzle the vinagrette over the salad and then toss the salad to coat it evenly with the dressing.
  • Serve and enjoy!
