White Chocolate Matcha Protein Bars

Making sure I get enough protein in my diet is very important. A way I like to do that is by making healthier snack options that incorporate protein powders! These white chocolate matcha protein bars are a delightful treat to enjoy for a quick breakfast or an afternoon snack! Each bar contain around 15 grams of protein and is packed with healthy fats and antioxidants! Matcha has 15x times the antioxidants than blueberries and also contains the amino acid L-theanine which promotes a calm mood. What’s not to love about these bars?

  • They are easy to make and require no baking.
  • They are rich in antioxidants and healthy fats.
  • They have a delicious matcha flavor that pairs well with the white chocolate.
  • They are made without any dairy, grains, gluten, and are almost refined sugar-free.

What you will need

Vanilla Protein Powder I use a plant based protein powder but any vanilla protein powder should work.

Cashew Butter Using a raw cashew butter gives these protein bars a soft chewy texture without overpowering the flavor of nut butter. You could try using a raw almond butter as well.

Almond Flour – This is a great gluten free flour alternative that is higher in protein and fiber.

Coconut Flour – This will help absorb some of the oil in the protein mixture.

Matcha Powder I use always use high quality ceremonial grade matcha. It has a richer green color and has a higher nutritional profile.

Nut Milk – You can use almond or coconut milk.

Maple Syrup – This is what we will use to sweeten the protein bars with.

Coconut Oil – This is a great healthy fat that also helps keep the protein bars more solid when chilled.

Vanilla Extract – The flavor of vanilla with matcha is fabulous!

DF White Chocolate Chips – I like to use the ones from Pascha that are made with clean ingredients.

How to make the white chocolate matcha protein bars

First, in a bowl, mix together the protein powder, almond flour, coconut flour, and matcha powder. In a separate bowl, whisk together the cashew or almond butter, melted coconut oil, maple syrup, nut milk, and maple syrup. Combine the wet and dry ingredients then fold in the white chocolate chips.

Next, add the mixture to a silicon loaf pan or metal loaf pan lined with parchment paper. Place the protein bar mixture in the fridge to chill for at least 2 hours. Take the protein bar mixture out of the loaf pan and carefully cut into 6 bars. Store in the fridge and enjoy throughout the week!

Ingredients

  • 2 tbsp coconut flour

  • 2 1/2 tsp matcha powder
  • 1/3 cup nut milk(room temp)
  • 2-3 tbsp maple syrup(room temp)
  • 1 tbsp melted coconut oil
  • 1 tsp vanilla extract
  • 1/2 cup dairy free white chocolate chips

Instructions
 

  • In a bowl, mix together the protein powder, almond flour, coconut flour, and matcha powder.
  • In a separate bowl, whisk together the cashew or almond butter, melted coconut oil, maple syrup, nut milk, and maple syrup.
  • Combine the wet and dry ingredients then fold in the white chocolate chips.
  • Add the mixture to a silicon loaf pan or metal loaf pan lined with parchment paper.
  • Place the protein bar mixture in the fridge to chill for at least 2 hours.
  • Take the protein bar mixture out of the loaf pan and carefully cut into 6 bars.

Notes

You can also place these white chocolate matcha protein bars in the freezer to save for longer.
