Creamy Vanilla Cashew Milk

This DELICIOUS and CREAMY Vanilla Cashew Milk will become your new fridge staple! I would always buy my nut milks from the store, and don’t get me wrong, there are some great brands out there, but it can get really expensive especially when you go through them as fast as I do. Save money and reduce your plastic use by making my recipe! It’s seriously so creamy and works great in smoothies and drinks. It even froths up very well for your morning lattes.

What you will need

Cashews – For this recipe you will want to make sure to use raw cashews not roasted. I love using the sprouted ones by Lark Ellen Farm.

Filtered Water – The base for this milk will be water and you definitely want to use filtered if you can!

Dates – I love using pitted Medjool dates to sweeten this cashew milk, but you can also use some maple syrup or honey as well.

Vanilla Bean Paste – You can substitute with regular vanilla extract, but I highly recommend using vanilla bean pasta for the best vanilla flavor!

Salt – You can add a pinch of salt to this cashew milk if you’d like to balance the sweetness a little.

How to make the creamy vanilla cashew milk

First, soak the cashews and pitted dates in a bowl with hot water. Let them soak for at least 2 hours, then drain.

Then, add the cashews and dates to a high power blender along with the filtered water and vanilla bean paste. Blend on medium for a few seconds, then turn the powder to high and blend for 1-2 minutes.

Lastly, pour into a glass jug and store in the fridge. Enjoy the vanilla cashew milk within 1 week of making.

STORAGE – This cashew milk will stay good in the fridge for up to 1 week!


SHAKE BEFORE USE – The cashew milk will have some separation naturally so always be sure to give it a good shake before using!

HOW TO FROTH – This cashew milk may not froth up quite as much as some of the other store bought milks because they contain thickeners and gums. However I think it really froths up well using this frother here.

HOW TO GET THE BEST TEXTURE – As long as you have a high powered blender like a Vitamix then you will have no trouble getting the texture smooth and creamy. If you don’t have a high powered blender then I recommend using a nut milk strainer or cheesecloth to filter out any larger nut particles.

HOW TO ENJOY – I personally use this milk almost daily in my morning matcha or coffee lattes! You can also use it as a base for any smoothie recipe or a baked goods recipe.
