Protein Pineapple Dole Whip
I was so obsessed with Dole Whip when I was younger, and this recipe hit so good! Fun fact about me: I actually got to go to the Dole Plantation in Hawaii years ago! Let’s just say I enjoyed all things pineapple when I was there! This recipe is seriously so simple to make and is super refreshing! You’ll wish you were sitting on a tropical beach enjoying the waves roll by while enjoying this protein pineapple dole whip. Also, I think the pineapple glasses are a fun touch too just saying!

What you will need
Pineapple – Picking a ripe pineapple can be tricky I know! You want to get one that is not too green, but is turning yellow. When you smell the outside of the pineapple and it smells sweet, then it is ready!
Coconut Cream – I love using full fat coconut cream from the can. This provides healthy fats and makes this frozen treat super smooth and creamy.
Vanilla Protein Powder – I love using a plant based vanilla powder in this recipe! Protein is essential and I always try to get optimal protein each day! Adding protein to this treat also makes it more blood sugar balanced.
Maple Syrup – This is optional if you want a sweeter flavor. You can also use honey or monk fruit to sweeten as well.
Coconut Water – Depending on how good your blender is, you may need to add a little coconut water or coconut milk to get it to blend well.

How to make the protein pineapple dole whip
First, cut a couple of fresh pineapples into small cubes making sure to cut off the skin. Place on a parchment paper lined sheet pan and freeze for at least 2 hours.
In a blender or food processor, add about 4 cups of frozen pineapple cubes, the 2/3 cup coconut cream, and the vanilla protein powder. Blend well in until a thick sorbet consistency forms.(It can take a few minutes for this process, and if your blender is having trouble add some coconut water from the coconut cream can until it starts to smooth out.)
Next, pour the pineapple dole whip into serving glasses and garnish with more pineapple or fresh mint leaves. Serve and enjoy immediately.
Note: This recipe is best enjoyed fresh and not refrozen. I wouldn’t suggest making a batch to freeze as the texture will not be the same.
